Chocolate Covered Macadamian Cookies

Ingredients:

2 Cups Macadamian nuts (or preferable nut)

1/3 Cup Coconut flour

2 Tbsp Butter flavored coconut oil

               (or Butter/buttersubstitute)

2 Tbsp Coconut oil

1 Tbsp Powdered xylitol

1/4 Tsp Sea salt

1 Tsp Vanilla extract.

Instructions:

​

1. Put all ingredients in a food processor and                 pulse until crumbly.

2. Pat down the mixture into a glass dish.

​

3. Melt chocolate chips and pour on top of the               base.

4. Freeze for at least 8 hours or until the                             Macadamian nut base hardens.

5. Enjoy!

Pro Tip:

To make spreading the chocolate easier, press mixture firmly into a glass dish (Step 2) and freeze it whilst melting the chocolate.
